Chimichurri Sauce

    Prepare the Chimichurri Sauce

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Skirt Steak

    Prepare the Skirt Steak

    Season the skirt steak with salt and black pepper on both sides. Heat olive oil in a skillet over high heat. Sear the steak for about 3-4 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Sweet Plantains

    Roast the Sweet Plantains

    Peel and slice the plantains diagonally. Heat olive oil in a skillet over medium heat. Add the plantain slices and sprinkle with salt. Cook until golden brown on both sides, about 2-3 minutes per side.

Roasted Veggies

    Roast the Vegetables

    Preheat the oven to 400°F (200°C). Chop bell peppers, zucchini, and red onion into bite-sized pieces. Toss them in olive oil, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, stirring halfway through.

Assembly

    Serve the Dish

    Slice the skirt steak against the grain. Arrange the roasted veggies and sweet plantains on a plate alongside the steak. Drizzle with chimichurri sauce and enjoy!
