Prepare the mussels
Rinse the mussels under cold water, scrubbing the shells to remove any dirt or barnacles. Discard any mussels that are open and do not close when tapped.

Make the broth
In a large pot, heat 1 tablespoon of oil over medium heat. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant. Stir in the curry paste and cook for another minute.

Combine ingredients
Pour in the vegetable broth and coconut milk, stirring to combine. Add the fish sauce, lime juice, and sliced red chili. Bring the mixture to a gentle simmer.

Cook the mussels
Add the cleaned mussels to the pot, cover with a lid, and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

Garnish and serve
Stir in the chopped cilantro and adjust seasoning with salt, if necessary. Serve the mussels in bowls with the broth, garnished with additional cilantro and lime wedges.
