    Prepare the Potatoes

    Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter and Boursin cheese to the drained potatoes. Mash until smooth and creamy. Adjust seasoning with salt and pepper to taste.

    Cook the Tenderloin

    Preheat a skillet over medium-high heat. Season the tenderloin with salt and black pepper. Add olive oil to the skillet and sear the tenderloin for about 3-4 minutes on each side for medium-rare. Remove from heat and let rest.

    Prepare the Peppercorn Cream Sauce

    In the same skillet, add heavy cream and crushed peppercorns. Cook on low heat for about 5 minutes until thickened, stirring frequently.

    Cook the Vegetables

    Blanch or sauté seasonal vegetables in a separate pan with olive oil, adding salt and pepper to taste.

    Serve

    Slice the tenderloin and place on a plate with a scoop of Boursin mash and seasonal vegetables. Drizzle with peppercorn cream sauce before serving.
