    Prepare the Grits

    In a medium saucepan, bring water to a boil. Stir in grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until grits are thick and creamy. Add in the aged white cheddar cheese, stirring until melted and well combined. Season with salt and pepper to taste.

    Cook the Shrimp

    In a large skillet, heat olive oil over medium-high heat. Toss the shrimp with blackening seasoning until well coated. Add the shrimp to the skillet and cook for about 2-3 minutes per side, or until they are opaque and cooked through. Remove from heat.

    Combine and Serve

    In the same skillet, add the fire roasted diced tomatoes and heat through. Serve the creamy white cheddar grits in bowls, topped with the blackened shrimp and fire roasted tomatoes. Garnish with chopped fresh parsley.
