    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add a pinch of salt and slowly stir in the stone ground grits. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally, until the grits are creamy and tender.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in the butter and aged white cheddar cheese until melted and well combined. Season with salt and pepper to taste. Keep warm.

    Cook the Shrimp

    In a large skillet, heat olive oil over medium-high heat. Toss the shrimp with blackening seasoning until evenly coated. Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until the shrimp are cooked through and opaque.

    Add Fire Roasted Tomatoes

    Once the shrimp are cooked, add the fire roasted tomatoes to the skillet and stir for another 2 minutes until heated through.

    Serve

    To serve, spoon a generous portion of the cheesy grits onto a plate, top with the blackened shrimp and fire roasted tomatoes, and garnish with chopped green onions.
