Preparation Steps

  1. 1

    Roast the Poblano Peppers

Preheat your oven to 450°F (230°C). Place the poblano peppers on a baking sheet and roast for about 20 minutes, turning occasionally, until the skin is charred and blistered. Remove from the oven and place in a bowl covered with plastic wrap for 10 minutes. Peel the skin off and chop the peppers.

  2. 2

    Prepare the Dressing

In a blender or food processor, combine olive oil, minced garlic, anchovy paste, lemon juice, Worcestershire sauce, salt, and black pepper. Blend until smooth.

  3. 3

    Assemble the Salad

Chop the romaine lettuce and place it in a large salad bowl. Add the roasted poblano peppers and croutons. Pour the dressing over the salad and toss gently to combine.

  4. 4

    Serve

Top the salad with grated Parmesan cheese and serve immediately.
