    Prepare Coconut Rice

    In a saucepan, combine jasmine rice, coconut milk, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and liquid is absorbed. Fluff with a fork and set aside.

    Cook Green Beans

    In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and immediately immerse in ice water to stop cooking. Drain again and set aside.

    Prepare Citrus Butter

    In a small saucepan, melt butter over low heat. Stir in orange juice and lemon juice, then add salt and pepper. Keep warm.

    Cook Grouper

    Season the grouper fillets with salt and pepper. Heat a skillet over medium-high heat with a little oil. Cook fillets for 3-4 minutes on each side until golden and cooked through.

    Prepare Fruit Salsa

    In a bowl, combine diced fresh fruit and chopped cilantro. Toss gently and set aside.

    On each plate, serve a portion of coconut rice, top with a grouper fillet, add green beans on the side, drizzle with citrus butter, and garnish with fruit salsa.
