    Prepare the Garlic Chile Glaze

    In a small saucepan over medium heat, combine minced garlic, chili paste, soy sauce, and brown sugar. Stir until the sugar dissolves and the glaze thickens slightly, about 5-7 minutes. Remove from heat and set aside.

    Cook the Pork Chops

    Season the double bone pork chops with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for about 4-5 minutes on each side until golden brown and cooked through. Brush the garlic chile glaze over the chops during the last minute of cooking.

    Prepare the Wasabi Mash

    Boil the potatoes until tender. Drain and mash them in a bowl. Mix in wasabi paste, salt, and pepper to taste until smooth and creamy.

    In another skillet, heat a little olive oil over medium heat. Add snap peas and sliced red bell pepper, sautéing for about 3-4 minutes until they are tender yet crisp. Season with salt and pepper.

    Plate the wasabi mash, top with the double bone pork chop, and arrange the sautéed snap peas and red peppers alongside. Drizzle any remaining garlic chile glaze over the dish.
