    Prepare the Steak

    Pound the beef steak to tenderize it to about 1/2 inch thick. Season both sides with salt and pepper.

    Coat the Steak

    Dredge the pounded steak in flour, ensuring it’s fully coated. Shake off excess flour.

    Fry the Steak

    In a large skillet, heat the oil over medium heat. Fry the coated steak for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.

    Cook the Breakfast Potatoes

    In the same skillet, add a little more oil if necessary, and add the breakfast potatoes. Cook until crispy and golden, about 10-12 minutes, stirring occasionally. Season with salt and pepper.

    Make the Sausage Gravy

    In another saucepan, cook the crumbled sausage over medium heat until browned. Add 2 tablespoons of flour to the sausage and stir for 1-2 minutes. Gradually add milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

    Cook the Eggs

    In a separate skillet, fry the eggs to your liking (sunny-side up, over-easy, etc.) using a little butter.

    Serve

    On each plate, place the fried steak, add the breakfast potatoes, top with eggs, and generously drizzle sausage gravy over the steak and potatoes.
