    Prepare the Shrimp

    In a large pot, bring water to a boil. Add the halved lemon and Old Bay seasoning. Once boiling, add the shrimp and cook for about 2-3 minutes, or until shrimp are pink and opaque. Remove from heat and drain.

    Chill the Shrimp

    Transfer the cooked shrimp to an ice bath to stop the cooking process. Allow them to chill for about 5-10 minutes, then drain and pat dry.

    Make the Yuzu Cocktail Vinaigrette

    In a bowl, whisk together yuzu juice, olive oil, honey, salt, and freshly ground black pepper to taste until well combined.

    Combine and Serve

    In a serving dish, toss the chilled shrimp with the Yuzu cocktail vinaigrette. Garnish with chopped chives and serve immediately.
