Prepare the Black Bean Puree
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add black beans, lime juice, salt, and pepper. Cook for another 5 minutes, then blend until smooth. Set aside.

Cook the Skirt Steak
Season the skirt steak with salt and black pepper. In a grill or skillet, heat the remaining tablespoon of olive oil over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Prepare the Eggs
Poach the eggs in boiling water for about 3-4 minutes or until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

Assemble the Benedict
Lightly toast the corn tortillas. Spread a layer of black bean puree on each tortilla. Top with slices of skirt steak, a poached egg, avocado slices, roasted red bell pepper, and garnish with cilantro.
