Prepare the Banana Crust
Peel the bananas and mash them in a bowl until smooth. Set aside.

Coat the Mahi Mahi
Preheat your oven to 375°F (190°C). Take each Mahi Mahi fillet and coat them generously with the mashed banana.

Bake the Fish
Place the coated fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the fish is cooked through and the banana crust is golden.

Prepare the Red Curry Sauce
In a small saucepan, combine 1 cup of coconut milk, 2 tablespoons of red curry paste, and a pinch of salt. Heat over medium heat, stirring until the sauce is warm and well mixed.

Sauté the Vegetables
In a separate skillet, heat 1 tablespoon of oil over medium heat. Add the snap peas, red bell peppers, and carrots. Sauté for about 5-7 minutes until they are tender-crisp.

Serve
Plate the baked banana mahi, top with the sautéed vegetables, and drizzle the red curry sauce over the dish.
