Steak Preparation

Season the Steak
Generously season both sides of the ribeye steaks with salt and black pepper. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

Heat the Pan
In a large skillet, heat olive oil over medium-high heat until shimmering but not smoking.

Cook the Steak
Add the steaks to the hot skillet and cook for 4-5 minutes on one side without moving them. Flip the steaks and add butter, garlic cloves, and thyme to the skillet.

Rest the Steak
Remove the steaks from the skillet and let them rest on a plate covered with aluminum foil for about 5-10 minutes.

Soak the Potatoes
Soak the potato strips in a bowl of cold water for at least 30 minutes to achieve extra crispiness.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked potato strips. Fry them in batches in the hot oil for about 4-5 minutes until golden brown. Remove and drain on paper towels.

Immediately sprinkle the hot fries with salt while they are still hot for maximum flavor.
