Preparation and Cooking
1. Prepare the Chimichurri Sauce
In a food processor, combine the parsley, oregano, garlic cloves, red wine vinegar, crushed red pepper flakes, salt, and black pepper.
2. Add Olive Oil
While the food processor is running, slowly drizzle in the olive oil until the mixture is well combined and smooth. Set aside to let the flavors meld.
3. Prepare the Steak
Season both sides of the ribeye steaks with salt and black pepper generously.
4. Grill the Steak
Preheat your grill to high heat. Place the seasoned steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.
5. Rest the Steak
Remove the steaks from the grill and let them rest for about 5 minutes to allow the juices to redistribute.
6. Serve
Slice the steaks against the grain and serve with the chimichurri sauce drizzled on top.
