    Preheat the Skillet

    Place a cast iron skillet on the stove over medium heat and let it preheat for about 5 minutes.

    Prepare the Cheese

    Cut the aged provolone cheese into a thick round (approximately 1 inch thick) to ensure it melts properly while grilling.

Cooking

    Add Olive Oil

    Once the skillet is hot, drizzle the olive oil evenly over the surface of the skillet.

    Grill the Cheese

    Carefully place the provolone cheese round in the skillet. Cook for about 5-7 minutes, or until the bottom is golden and starts to bubble.

    Add Spices

    Sprinkle the dried oregano, red pepper flakes, freshly ground black pepper, and salt (to taste) over the melted cheese.

    Finish Cooking

    Continue to cook for an additional 3-5 minutes until the edges are crispy and the cheese is fully melted and bubbling.
