    Soak the Sweetbreads

    Begin by soaking the beef sweetbreads in cold water for at least 2 hours, or overnight, to remove any impurities. Change the water a couple of times during soaking.

    Blanch the Sweetbreads

    After soaking, drain the sweetbreads and place them in a pot of boiling salted water. Blanch for about 5 minutes, then remove and place in an ice bath to stop the cooking process.

    Trim and Clean

    Once cooled, carefully remove the membrane and any fat from the sweetbreads. Cut them into bite-sized pieces.

    Season the Sweetbreads

    In a bowl, combine the sweetbreads with salt, black pepper, and garlic powder. Toss until evenly coated.

    Sear the Sweetbreads

    Heat olive oil in a skillet over medium-high heat. Add the seasoned sweetbreads and cook until golden brown and crispy on all sides, about 5-7 minutes.

    Reduce the heat to low, add the butter, and let it melt. Squeeze in fresh lemon juice and toss with the sweetbreads until well coated.
