Chicken Preparation

Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Bread the Chicken

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in beaten eggs, and then coat with breadcrumbs.

  3. 3

    Fry the Chicken

In a skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

White Sauce

  1. 4

    Make the Roux

In a saucepan, melt butter over medium heat. Stir in the flour and cook for about 1-2 minutes until golden.

  2. 5

    Add Milk

Gradually whisk in the milk, stirring constantly until the mixture thickens.

  3. 6

    Season the Sauce

Add salt, black pepper, garlic powder, and grated Parmesan cheese. Stir until the cheese is melted and the sauce is creamy. Remove from heat.

Assembling the Dish

  1. 7

    Top the Chicken

Place each fried chicken breast on a plate. Pour a generous amount of white sauce over each piece.

  2. 8

    Add Cheese and Peppers

Top with shredded mozzarella cheese and sliced roasted red bell peppers.

  3. 9

    Melt the Cheese

If desired, place under a broiler for 2-3 minutes to melt and slightly brown the cheese.

Salad and Serving

  1. 10

    Prepare the Salad

In a bowl, combine mixed salad greens, olive oil, balsamic vinegar, and salt. Toss to coat.

  2. 11

    Serve the Dish

Serve the Milanesa Suiza with the mixed salad on the side and your choice of French fries or mashed potatoes.
