Steak Preparation

    Season the Steak

    Remove the filet mignon from the refrigerator and allow it to come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Sear the Steak

    In a heavy skillet, heat the olive oil over medium-high heat until shimmering. Add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Add Aromatics

    During the last minute of cooking, add the garlic and rosemary to the skillet, spooning the oil over the steak for added flavor.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Mixed Salad Preparation

    Prepare the Salad

    In a large salad bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.

    Dress the Salad

    In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper. Pour the dressing over the salad and toss to combine.

Mashed Potatoes or French Fries Preparation

    For Mashed Potatoes

    Peel and chop the potatoes into quarters. Boil in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add the butter and milk to the potatoes and mash until smooth. Season with salt and black pepper to taste.

    For French Fries

    If making fries, cut the potatoes into thin strips. Heat oil in a deep fryer or large saucepan to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels and season with salt.
