Method
Prepare the Base
- 1
Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it's warm, but not boiling.
- 2
Mix Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.
- 3
- 4
Cook the Mixture
Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).
- 5
Add Vanilla Extract
Remove the mixture from heat and stir in the vanilla extract. Allow the base to cool at room temperature, then refrigerate for at least 2 hours, or until completely chilled.
Prepare the Flavoring
- 6
Prepare the Berries
Wash the fresh berries thoroughly, and if using strawberries, hull and slice them. If desired, mash the berries slightly to release their juices.
- 7
Mix with Lemon Juice
In a small bowl, combine the prepared berries with lemon juice. This will enhance their flavor and help prevent browning.
Churn the Gelato
- 8
Churn the Base
Pour the chilled base into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- 9
Add Flavorings
During the last few minutes of churning, add the berry mixture to the gelato base, mixing until evenly distributed.
Freeze and Serve
- 10
Transfer to Container
Transfer the gelato to an airtight container. Smooth the top and cover with plastic wrap before sealing with a lid.
- 11
Freeze
Freeze the gelato for at least 4 hours, or until firm.
- 12
Serve
Scoop the gelato into bowls or cones and enjoy your homemade gelato!
