Preparation of Vegetables

    Trim the hard ends of the asparagus by bending them gently until they snap. Rinse under cold water.

    Remove the stems and seeds from the bell peppers, then chop them into bite-sized pieces.

    Slice the Zucchini

    Cut the zucchini in half lengthwise, then slice it into half-moon shapes.

    Peel the red onion and cut it into wedges, keeping the layers intact.

Marinade Preparation

    In a bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, salt, and black pepper until well blended.

Grilling
