Caramel

Method

Making the Caramel

  1. 1

    Prepare the Caramel

In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring gently until the sugar dissolves.

  2. 2

    Cook the Caramel

Once the sugar has dissolved, stop stirring and allow the mixture to boil. Swirl the pan occasionally until the caramel turns a deep amber color. Be careful not to burn it.

  3. 3

    Pour the Caramel

Quickly pour the caramel into a round flan mold or individual ramekins, tilting them to coat the bottom evenly. Set aside to cool and harden.

Making the Custard

  1. 4

    Prepare the Custard Mixture

In a large mixing bowl, whisk together the whole milk, sweetened condensed milk, eggs, vanilla extract, and a pinch of salt until smooth.

  2. 5

    Strain the Mixture

Optionally, strain the custard mixture through a fine-mesh sieve into another bowl to remove any lumps.

  3. 6

    Pour into Mold

Carefully pour the custard mixture over the hardened caramel in the mold, filling it almost to the top.

Baking the Flan

  1. 7

    Prepare the Water Bath

Preheat the oven to 350°F (175°C). Place the flan mold into a larger baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the flan mold.

  2. 8

    Bake the Flan

Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted comes out clean.

  3. 9

    Cool the Flan

Remove the flan from the water bath and allow it to cool at room temperature. Then refrigerate for at least 4 hours or overnight.

Serving the Flan

  1. 10

    Unmold the Flan

To serve, run a knife around the edges of the flan to loosen it. Place a serving plate on top of the mold and invert it to release the flan.

  2. 11

    Garnish and Enjoy

You can garnish the flan with fresh berries or whipped cream if desired. Slice and serve chilled.
