Method

Directions

  1. 1

    Marinate the Skirt Steak

In a large bowl, combine the olive oil, minced garlic, lime juice, cumin, paprika, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Prepare the Skirt Steak

Place the skirt steak in the bowl and coat it thoroughly with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

  3. 3

    Preheat the Grill

Preheat your grill to high heat (about 450°F or 232°C). If you are using a stovetop grill pan, heat it over medium-high heat.

  4. 4

    Grill the Skirt Steak

Remove the skirt steak from the marinade and let any excess marinade drip off. Place the steak on the grill and cook for about 3-5 minutes on each side, depending on your preferred doneness (medium-rare is recommended).

  5. 5

    Rest the Steak

Once cooked, remove the steak from the grill and let it rest for 5-10 minutes. This allows the juices to redistribute throughout the meat.

  6. 6

    Serve

Slice the skirt steak against the grain into thin strips. Garnish with chopped fresh cilantro and serve with lime wedges on the side.
