Method

Steak Preparation

  1. 1

    Resting the Steak

Remove the outside skirt steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

  2. 2

    Make the Marinade

In a bowl, combine minced garlic, olive oil, salt, black pepper, and lemon juice. Mix well to create a marinade.

  3. 3

    Marinate the Steak

Rub the marinade all over the skirt steak, ensuring it is well-coated. Let it marinate for at least 30 minutes, or up to 2 hours for a stronger flavor.

  4. 4

    Heat Grill/Skillet

Preheat your grill or skillet over high heat until very hot.

  5. 5

    Cook the Steak

Grill the skirt steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

  6. 6

    Rest the Steak

Once cooked, remove from heat and let the steak rest for 5 minutes before slicing.

  7. 7

    Slice and Serve

Slice the steak against the grain into thin strips and garnish with freshly chopped parsley.

Optional Side Preparation

  1. 8

    Preheat Oven

Preheat the oven to 200°C (400°F).

  2. 9

    Prepare Potatoes

Wash and cut the potatoes into wedges.

  3. 10

    Season Potatoes

In a bowl, toss the potato wedges with olive oil, salt, and fresh rosemary until evenly coated.

  4. 11

    Bake Potatoes

Spread the potatoes on a baking sheet in a single layer and bake for 25-30 minutes, turning halfway through, until crispy and golden brown.
