Chorizo Preparation

Preheat the Grill
Preheat your grill to medium-high heat, about 400°F (200°C).

Prepare the Chorizo
Rub the Argentine chorizo sausages with olive oil, salt, and black pepper. Ensure they are evenly coated.

Grill the Chorizo
Place the sausages on the grill and cook for 10-15 minutes, turning occasionally, until they are browned and cooked through. Remove from heat.
Chimichurri Sauce Preparation

Mix Ingredients
In a bowl, combine the finely chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

Stir and Adjust
Stir until well mixed. Taste and adjust seasoning if necessary.

Let it Rest
Let the chimichurri sauce sit for at least 15 minutes to allow the flavors to meld.
