Prepare the Bread
While the chorizo is cooking, slice the crusty bread rolls in half lengthwise. Optionally, you can toast them lightly on the grill or in a toaster for added texture.

Assemble the Choripan
Once the chorizo is cooked, place one sausage inside each roll. Drizzle generously with chimichurri sauce before serving.
Chimichurri Sauce Preparation

Combine Ingredients
In a medium bowl, combine the chopped parsley, chopped oregano, minced garlic, red wine vinegar, olive oil, salt, black pepper, and red pepper flakes.

Mix the Sauce
Whisk together until all the ingredients are well mixed. Adjust seasoning to taste if necessary.

Let it Rest
Allow the chimichurri sauce to sit for at least 15 minutes at room temperature to let the flavors meld together.
