Pasta Dough

Method

Pasta Dough

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into the well. Using a fork, gradually incorporate the flour into the eggs until a rough dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead it for about 10 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Cheese Filling

  1. 3

    Mix the Filling

In a mixing bowl, combine the ricotta cheese, Parmesan cheese, mozzarella cheese, egg, black pepper, salt, and chopped basil. Mix well until all ingredients are fully incorporated.

Tomato Sauce

  1. 4

    Cook the Sauce

In a saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Add the canned crushed tomatoes, oregano, salt, and black pepper. Simmer for about 20 minutes, stirring occasionally.

  2. 5

    Finish the Sauce

Stir in the chopped fresh basil just before serving. Adjust seasoning if necessary.

Assemble and Cook Ravioli

  1. 6

    Roll Out the Dough

Divide the rested dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour as needed.

  2. 7

    Fill the Ravioli

Place small spoonfuls of the cheese filling onto one sheet of pasta, leaving space between each. Moisten the edges with water, then place another sheet of pasta on top and press down to seal.

  3. 8

    Cut and Cook the Ravioli

Cut the ravioli using a pasta cutter or knife. Bring a large pot of salted water to a boil and gently add the ravioli. Cook for about 4-5 minutes until they float to the top. Remove with a slotted spoon.

  4. 9

    Serve

Plate the ravioli and top with the tomato sauce. Garnish with additional basil and grated Parmesan cheese if desired.
