Preparing the Marinade

    Make the Marinade

    In a bowl, combine the olive oil, minced garlic, red wine vinegar, paprika, salt, black pepper, oregano, and cumin. Mix well to create a marinade.

Marinating the Meat

    Marinate the Meats

    Place all cuts of meat in a large bowl or zip-lock bag. Pour the marinade over the meat and ensure they are well coated. Seal and refrigerate for at least 4 hours, preferably overnight.

Grilling the Asado

    Prepare the Grill

    Preheat your grill to medium-high heat. If using charcoal, allow the coals to become white hot.

    Cook the Meat

    Start by grilling the beef ribs and short ribs first, as they take the longest. Cook for about 15-20 minutes per side, or until well browned and cooked to your liking. Next, add the pork chops and chicken thighs, grilling for about 8-10 minutes per side. Finally, add the chorizo sausages, cooking for about 5-7 minutes, turning occasionally until nicely charred.

    Grill the Vegetables

    While the meats are cooking, toss the vegetables in a little olive oil and season with salt and pepper. Place them on the grill and cook for about 5-7 minutes, turning occasionally until tender and slightly charred.

Serving

    Serve the Asado

    Once all the meats are cooked, remove them from the grill and let them rest for a few minutes. Slice and serve with chimichurri sauce on the side, along with the grilled vegetables.
