Preparation

    Marinating the Meats

    In a bowl, combine the olive oil, minced garlic, lemon juice, chopped parsley, salt, black pepper, and paprika. Mix well to form a marinade.

    Marinating Sweetbread and Chicken

    Add the sweetbread and chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking

    Cooking the Sweetbread

    In a pan over medium heat, add a little olive oil. Once hot, add the marinated sweetbread and cook for about 5-7 minutes until golden brown and cooked through. Remove from the pan and set aside.

    Cooking the Chicken

    In the same pan, add the marinated chicken thighs. Cook for about 7-10 minutes on each side until fully cooked and golden brown. Ensure the internal temperature reaches 75°C (165°F).

    Cooking the Blood Sausage

    While the chicken is cooking, in another pan over low heat, cook the blood sausage slices for about 3-4 minutes on each side until warmed through.

Serving

    Plating the Dish

    On a large serving platter, arrange the cooked sweetbread, chicken thighs, and blood sausage. Garnish with lemon wedges and fresh parsley before serving.
