Cookie Preparation

Cream the Butter and Sugar
In a large bowl, beat the unsalted butter and powdered sugar together until creamy and light in color.

Add Vanilla
Mix in the vanilla extract until well combined.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.

Mix Dry Ingredients with Wet
Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined. Do not overmix.

Chill the Dough
Cover the dough with plastic wrap and refrigerate for at least 30 minutes, or until firm.
Baking

Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Shape the Cookies
Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on the prepared baking sheet, leaving space between each cookie.

Bake the Cookies
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.

Fill with Dulce de Leche
Once the cookies are completely cool, spread a generous amount of dulce de leche on the flat side of one cookie and sandwich it with another cookie.

Roll in Coconut
Roll the edges of the sandwich cookie in the shredded coconut until well coated.
