Method

Preparation of Salmon

  1. 1

    Prepare the Salmon

Season the salmon fillets with salt and black pepper on both sides. Let them sit at room temperature for about 15 minutes.

Making the Sauce

  1. 2

    Melt the Butter

In a medium saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.

  2. 3

    Add Lemon and Capers

Stir in the lemon juice and capers, then let the mixture simmer for another 2-3 minutes to combine the flavors.

Cooking the Salmon

  1. 4

    Cook the Salmon

In a large skillet over medium-high heat, add a tablespoon of the lemon butter sauce. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for an additional 3-4 minutes, or until the salmon is cooked through. Remove from heat.

Serving the Dish

  1. 5

    Combine the Ingredients

In a large bowl, toss together the arugula and cherry tomatoes. Divide the salad onto plates and place a salmon fillet on top of each serving.

  2. 6

    Drizzle the Sauce

Spoon the lemon butter sauce over the salmon fillets and garnish with extra capers if desired. Serve immediately.
