Pasta

Method

Prepare the Pasta

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set aside, reserving 1/2 cup of pasta water.

Prepare the Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the sliced bell pepper, zucchini, cherry tomatoes, broccoli florets, and carrot. Cook for 5-7 minutes until the vegetables are tender but still crisp.

Combine and Serve

  1. 3

    Mix Together

Add the cooked pasta to the skillet with the sautéed vegetables. Pour in the reserved pasta water, chopped basil, salt, and black pepper. Toss everything together until well combined. Cook for an additional 2-3 minutes to heat through.

  2. 4

    Serve

Remove from heat and sprinkle with grated Parmesan cheese. Serve immediately, garnished with additional basil if desired.
