Crust Preparation

Activate Yeast
In a small bowl, combine warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together the gluten-free pizza flour blend, xanthan gum, and salt.

Combine Ingredients
Add the activated yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.

Knead Dough
Knead the dough on a lightly floured surface (using gluten-free flour) for about 5 minutes until smooth. If the dough is sticky, add a bit more flour as needed.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30-40 minutes or until it doubles in size.
Pizza Assembly

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat as well.

Shape the Crust
Once the dough has risen, punch it down and transfer it to a gluten-free floured surface. Roll out the dough to your desired thickness, about 1/4 inch thick.

Add Sauce and Toppings
Transfer the rolled-out crust to a baking sheet or pizza stone. Spread the pizza sauce evenly over the crust, then sprinkle shredded mozzarella cheese on top. Add pepperoni slices and bell peppers as desired.

Bake Pizza
Bake the pizza in the preheated oven for about 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.

Remove the pizza from the oven and garnish with fresh basil leaves. Let it cool for a few minutes before slicing and serving.
