Garlic Parmesan Topping

Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash and peel the Russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

  2. 2

    Soaking the Fries

Place the cut fries in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.

  3. 3

    Drying the Fries

Drain the fries and pat them dry with paper towels to remove as much moisture as possible.

  4. 4

    Heating the Oil

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

  5. 5

    Frying the Fries

Carefully add a batch of fries to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels. Season with salt and black pepper immediately.

Making the Garlic Parmesan Topping

  1. 6

    Preparing the Garlic

In a small saucepan over low heat, add the olive oil and minced garlic. Sauté for about 2-3 minutes until the garlic is fragrant but not browned.

  2. 7

    Combining the Topping

In a large bowl, combine the fried fries, sautéed garlic and oil, grated Parmesan cheese, and chopped parsley. Toss everything together until the fries are evenly coated.

Serving

  1. 8

    Plating

Serve the garlic Parmesan fries hot, garnished with additional parsley if desired.
