Salad Preparation

Prepare the Tomatoes
Wash the heirloom tomatoes thoroughly under cold water. Cut them into bite-sized pieces or wedges, depending on your preference. Place them in a large mixing bowl.

Crumble the Blue Cheese
Take the Oregon blue cheese and crumble it into small pieces. Sprinkle the crumbled cheese over the tomato and onion mixture.
Dressing Preparation

Mix the Dressing
In a small bowl, combine the aged balsamic vinegar, Spanish olive oil, salt, and black pepper. Whisk together until well combined.

Pour the dressing over the tomato salad mixture. Gently toss everything together until the ingredients are evenly coated with the dressing.
