Method

Preparation

  1. 1

    Clean the Clams

Thoroughly rinse the fresh clams under cold water to remove sand and grit. Set aside in a bowl.

  2. 2

    Chop the Vegetables

Peel and dice the potatoes into small cubes. Finely chop the onion and celery.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, melt the butter over medium heat. Add the chopped onion and celery, and sauté until they are soft and translucent, about 5 minutes.

  2. 4

    Add Potatoes and Clam Juice

Add the diced potatoes to the pot, followed by the clam juice. Bring to a boil, then reduce heat to simmer for about 15 minutes, or until the potatoes are tender.

  3. 5

    Incorporate Clams and Seasonings

Add the fresh clams, salt, black pepper, thyme, and bay leaf to the pot. Cook for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.

  4. 6

    Finish with Cream

Stir in the heavy cream and chopped parsley. Allow the chowder to heat through for another 2-3 minutes. Adjust seasoning if needed.
