Method

Preparation of Lobster

    Cook the Lobster

    In a large pot of boiling salted water, cook the whole lobsters for about 8-10 minutes until they are bright red. Remove them from the pot and let them cool. Once cooled, remove the meat from the claws and tails, chop it into small pieces, and set aside. Keep the shells for making the stock.

Making the Bisque

    Sauté Vegetables

    In a large pot, heat the butter over medium heat. Add the chopped onion, celery, and carrot, and sauté until the vegetables are soft and translucent, about 5-7 minutes. Add minced garlic and cook for an additional minute.

    Add Tomato Paste

    Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly.

    Deglaze with Brandy

    Pour in the brandy and scrape the bottom of the pot to release any browned bits. Let it simmer for about 2-3 minutes until the brandy has reduced by half.

    Add Stock and Seasonings

    Add the fish stock, lobster shells, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce to a simmer. Let it cook for about 30 minutes to extract the flavors from the shells.

    Strain the Broth

    After simmering, strain the mixture through a fine-mesh sieve into another pot, discarding the solids. Return the liquid to the pot and bring it back to a gentle simmer.

    Add Cream and Lobster Meat

    Stir in the heavy cream and the reserved lobster meat. Allow it to heat through for another 5 minutes. Adjust seasoning if necessary.

Serving

    Ladle the bisque into bowls and garnish with chopped chives. Serve hot with crusty bread on the side.
