Preparation of Cherry Gastrique

    Make the Gastrique

    In a saucepan, combine cherry preserves and red wine vinegar. Bring to a simmer over medium heat, stirring occasionally until the mixture reduces by half and thickens slightly, about 15-20 minutes. Set aside to cool.

Cooking Nueske Lardons

    Cook the Lardons

    In a skillet over medium heat, add the Nueske bacon slices. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and place on a paper towel to drain any excess fat. Reserve the bacon fat in the skillet for cooking the scallops.

Cooking Hokkaido Scallops

    Sear the Scallops

    Pat the Hokkaido scallops dry with paper towels and season with salt and black pepper. In the same skillet with reserved bacon fat, heat olive oil over medium-high heat. Once hot, add the scallops without crowding the pan. Sear for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the skillet and set aside.

Serving

    Plate the Dish

    On each serving plate, place a spoonful of pisto in the center. Arrange the seared scallops on top of the pisto. Drizzle the cherry gastrique around the plate and sprinkle the crispy lardons over the scallops. Serve immediately.
