Preparing the Shrimp

Clean the Shrimp
Start by rinsing the Ecuadorian white shrimp under cold water to remove any impurities.

Boil the Shrimp
In a large pot, bring water to a boil. Add 1 tsp of salt and the cleaned shrimp. Cook for about 2-3 minutes or until the shrimp turn pink and opaque. Be careful not to overcook.

Chill the Shrimp
Remove the shrimp from the boiling water and immediately place them in an ice bath to stop the cooking process. Let them cool for about 5 minutes.

Add Lemon Juice
Drain the shrimp and toss them with 2 tbs of lemon juice to add flavor and a touch of acidity.
Making the Cocktail Sauce

Combine Ingredients
In a medium bowl, mix together 1 cup of ketchup, 2 tbs of horseradish, 1 tsp of Worcestershire sauce, 1 tbs of lemon juice, and 1 tsp of hot sauce.

Season the Sauce
Taste the sauce and add salt to taste, adjusting the spiciness and flavor according to your preference.
Plating and Serving

Arrange the Shrimp
On a serving platter, arrange the chilled shrimp in a circular fashion.

Serve with Sauce
Place the cocktail sauce in a small bowl in the center of the shrimp. Garnish with fresh parsley and lemon wedges around the platter.
