Shrimp Preparation

Marinate the Shrimp
In a medium bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, and black pepper. Add the shrimp and toss well to coat. Cover and refrigerate for at least 30 minutes.

Grill the Shrimp
Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 30 minutes prior). Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.

Prepare the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the brussels sprouts and sauté for about 5 minutes until they start to brown.

Add Remaining Vegetables
Add broccoli florets, green beans, and chopped kale to the skillet. Season with salt and black pepper. Cook for an additional 5-7 minutes until the vegetables are tender but still crisp. Finally, stir in the fresh spinach and cook for another 2 minutes until wilted.

Serve
