Method
Preparing the Grains

Cook Brown Rice
In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 45 minutes or until the rice is tender and the water is absorbed.

Cook Quinoa
In another saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.

Cook Wheatberries
In a separate pot, add 1 cup of wheatberries and cover with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 50-60 minutes until tender.

Sauté Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté for about 2-3 minutes or until wilted. Season with a pinch of salt and pepper.
Preparing the Protein

Grill the Salmon
Preheat the grill to medium-high heat. Brush the salmon fillet with 1 tablespoon of olive oil, season with salt, pepper, and minced garlic. Grill for about 4-5 minutes on each side or until cooked through and flaky.

Assembling the Powerbox

Combine the Ingredients
In a large bowl, combine the cooked brown rice, quinoa, and wheatberries. Toss gently to mix. Add the sautéed spinach and mix well.

Plate the Dish
Spoon the grain and spinach mixture into a serving bowl. Top with the grilled salmon and shrimp. Garnish with chopped fresh parsley before serving.
