Prepare the Lobster
In a medium bowl, combine the lobster meat, mayonnaise, lemon juice, Dijon mustard, finely chopped celery, chopped chives, salt, and black pepper. Mix gently until all ingredients are well combined.
Bun Preparation

Toast the Buns
In a skillet over medium heat, melt the unsalted butter. Once melted, add the New England style hot dog buns, cut side down, and toast until golden brown, about 2-3 minutes.

Add Truffle and Parmesan
Once the tater tots are cooked, remove them from the oven and drizzle with truffle oil. Sprinkle grated Parmesan cheese and chopped parsley over the tots while still hot. Toss gently to combine.
Assemble the Lobster Roll

Fill the Buns
Spoon the lobster filling generously into each toasted bun. Serve immediately with the truffle-parmesan tater tots on the side.
