Hush Puppies

Method

Hush Puppies

  1. 1

    Prepare the Batter

In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well until all dry ingredients are combined.

  2. 2

    Add Wet Ingredients

Add the finely chopped onion, beaten egg, and milk to the dry ingredients. Stir until just combined; do not over mix. The batter should be thick.

  3. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small spoonful of batter into it; if it sizzles, it's ready.

  4. 4

    Fry the Hush Puppies

Using a tablespoon, carefully drop rounded spoonfuls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pot. Cook for 3-4 minutes on each side, or until golden brown.

  5. 5

    Drain and Serve

Remove the hush puppies from the oil and place them on a paper towel-lined plate to drain excess oil. Keep warm while you fry the remaining batter.

Old Bay Dip

  1. 6

    Mix the Ingredients

In a medium bowl, combine the mayonnaise, sour cream, Old Bay seasoning, lemon juice, garlic powder, and salt. Stir until smooth and well blended.

  2. 7

    Chill the Dip

Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld.

  3. 8

    Serve

Serve the hush puppies warm with the Old Bay dip on the side.
