    Prepare the Fish

    Rinse the fish fillets under cold water and pat them dry with paper towels.

    Season the Fish

    Rub the blackening seasoning evenly over both sides of each fish fillet.

    Cook the Fish

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned fish fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a nice blackened crust.

    Assemble the Sandwich

    Toast the burger buns lightly. On the bottom half of each bun, layer the lettuce, blackened fish fillet, pickles, a generous dollop of tartar sauce, and sprinkle with fresh herbs. Top with the other half of the bun.

Seasoned Fries

    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). Cut the potatoes into fry shapes and soak them in water for about 30 minutes to remove excess starch, then drain and pat dry.

    Season the Fries

    In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

    Bake the Fries

    Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, turning halfway through, until crispy and golden.
