For the St. Louis Cut Smoked Pork Ribs

    Prepare the Rub

    In a bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper to create a dry rub.

    Season the Ribs

    Rub the spice mixture generously over both sides of the St. Louis cut pork ribs. Let it marinate for at least 1 hour, or overnight for best flavor.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) and prepare it with your preferred wood chips.

    Smoke the Ribs

    Place the ribs in the smoker and smoke for 4-5 hours, spritzing with apple cider vinegar every hour to keep them moist.

    Apply Barbecue Sauce

    In the last 30 minutes of cooking, brush barbecue sauce over the ribs, allowing it to caramelize slightly.

    Rest and Serve

    Once cooked, remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve with a side of your choice and a chunk of fresh cornbread.
