Prepare the Pork
Trim excess fat from the pork shoulder. Rub the yellow mustard all over the pork, ensuring an even coating.

Season the Pork
Generously apply the pork rub seasoning, salt, and black pepper over the mustard-coated pork. Make sure to cover all sides.

Prepare the Smoker
Soak the applewood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Pork
Place the pork shoulder in the smoker and add the soaked applewood chips. Smoke for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

Rest the Meat
Once done, remove the pork from the smoker and let it rest for at least 30 minutes before shredding.

Shred and Serve
Use two forks to shred the pork into bite-sized pieces. Mix in the apple cider vinegar and BBQ sauce to taste. Serve on buns or with sides of your choice.
