    Preparation

    Rinse the turkey under cold water and pat it dry with paper towels.

    Seasoning

    In a small bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, thyme, and rosemary. Rub this mixture evenly over the entire turkey, making sure to get under the skin where possible.

    Resting

    Let the turkey sit at room temperature for about 30 minutes to absorb the flavors.

    Preparing the Smoker

    Preheat your smoker to 225°F (107°C) and soak the applewood chips in water for about 30 minutes.

    Smoking the Turkey

    Once the smoker is ready, drain the applewood chips and add them to the smoker. Place the turkey in the smoker and close the lid. Smoke the turkey for approximately 30 minutes per pound, or until the internal temperature reaches 165°F (74°C).

    Resting Again

    Remove the turkey from the smoker and let it rest for at least 20-30 minutes before carving.
