Pork Ribs and Rub

    Prepare the Ribs

    Remove the membrane from the back of the pork ribs. Pat them dry with paper towels.

    Make the Rub

    In a bowl, mix together brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper.

    Apply Mustard and Rub

    Spread mustard over the ribs, then generously apply the dry rub all over the ribs, pressing it into the meat.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) and soak the wood chips in water for about 30 minutes before placing them in the smoker.

    Smoke the Ribs

    Place the ribs in the smoker, bone side down, and smoke for about 4-5 hours. Use apple cider vinegar to spritz the ribs every hour to keep them moist.

    Check for Doneness

    Ribs are done when they are tender and the meat has pulled back from the bone. Internal temperature should be around 190°F (88°C).

    Rest and Serve

    Remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve the ribs whole or cut between the bones.
