Same as our Original Texas Tater but we substitute the applewood smoked, pulled pork for our tender 15 hour smoked, chopped, beef brisket.

    Prepare the Brisket

    Season the beef brisket with salt, black pepper, and paprika. Rub the spices into the meat thoroughly. Smoke the brisket at 225°F for 15 hours or until it's tender and can be shredded easily.

    Cook the Potatoes

    While the brisket is smoking, wash the potatoes and pierce them with a fork. Rub them with olive oil and sprinkle with salt. Bake the potatoes in the oven at 400°F for about 45-60 minutes or until tender.

    Prepare Toppings

    Once the brisket is cooked, chop or shred it into bite-sized pieces. Prepare the toppings by shredding cheddar cheese, chopping green onions, and getting the sour cream ready.

    Assemble the Brisket Tater

    Once the potatoes are baked, cut them open lengthwise and fluff the insides with a fork. Add butter, chopped brisket, shredded cheddar cheese, a dollop of sour cream, and sprinkle with chopped green onions.
