Prepare the Brisket
Trim excess fat from the brisket and generously apply the beef rub all over the meat. Let it sit at room temperature for about 30 minutes.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) and add the wood chips to the smoker box.

Smoke the Brisket
Place the brisket in the smoker and smoke for approximately 15 hours, or until the internal temperature reaches 195°F (90°C).

Slice or Chop the Brisket
After resting, slice or chop the brisket to your desired thickness.

Assemble the Sandwich
Place the sliced or chopped brisket on sandwich buns, top with Bros. pickles and chopped onion, and serve.
