    Prepare the Pork

    Rub the pork shoulder with olive oil, salt, and black pepper. Let it sit for at least 30 minutes at room temperature.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Add the applewood chips to the smoker. Place the pork shoulder in the smoker and smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Shred the Pork

    Once the pork is done, remove it from the smoker and let it rest for 30 minutes. Then, shred the pork using two forks.

    Mix with BBQ Sauce

    In a large bowl, mix the shredded pork with the BBQ sauce until well coated.

    Assemble the Sandwiches

    Toast the buns lightly on the grill. Place a generous amount of pulled pork on each bun, top with Bros. pickles and chopped onion.
